A simple, healthy take on a tuna pasta bake dish - packed with vitamin c, b and iron!! The best bit is, it only takes thirty minutes - including prep!! Ok so it might look a little like slop but I promise it is really delicious!!
Serves: 4
Ingredients:
400g quinoa pasta
1 can chopped tomatoes
1 portion cherry tomatoes
1 Onion
1 clove garlic
1 portion of kale
1 portion of spinach
Diced mushrooms
1 can tuna in sunflower oil
Watercress (garnish)
Method:
- Cook the pasta for 10 minutes.
- At the same time, in a wok; add the diced onion and garlic.
- Add the chopped tomatoes and cherry tomatoes until cooked.
- Add the diced mushroom, spinach, kale and tuna and mix well.
- Add the pasta and stir well.
- Pour into a casserole dish and top with cheese or vegan cheese if you are are trying to save those baby cows like me.
- Bake for 20 minutes in the oven.
- Serve and add watercress on top for garnish.
