This simple meal, is something that I literally threw together tonight and tasted delicious - I love it when that happens! I lack in iron so this dish is a really good one; as it is packed with greens high in vitamins, iron and minerals. It is a no fuss dish, with minimal effort but incredibly healthy. It is a great meal if you are on a rest day from the gym or an exercise regime, or if you just want to try something zesty and different. I hope you like it, let me know your thoughts.

Serves 2
Ingredients:
1 Tbsp Coconut Oil
2 Diced Chicken Breasts
1 Diced clove garlic
Salt and Pepper
1 Heavy Tbsp Pesto
1/2 Lemon squeezed
1/4 Chopped Broccoli
2 Handfuls of Spinach
1 Handful Kale
1 Tbsp light mayonnaise
2 Handfuls of Pine Nuts
Method:
1. Add the coconut oil into the wok/pan until melted; on a high temperature and add the diced chicken until golden and cooked through.
2. Throw in the pesto, garlic and the lemon juice and stir.
3. Add the broccoli, spinach, kale and seasoning.
4. Before the next step, add a dash of water, with the mayonnaise and stir frequently; on a low temperature. Stir until it is of a good consistency - I will allow you to judge how runny you like it as a sauce.
5. Finally add the pine nuts and allow to simmer for 10-15 minutes.
6. Serve and enjoy. ©
